🌟make the muffins batter: In a bowl, mix flour, desiccated coconut, sugar, baking powder, baking soda mix and keep aside. In another bowl Whisk melted butter, coconut milk (or any milk), egg and coconut extract. Combine wet ingredients and dry ingredients gently. Pour the batter into lined muffin cups, filling 3/4 cup.

🌟Bake: Bake in a preheated oven at 180°c for 18-21 mins or until golden and a toothpick comes out clean, let the muffins cools completely before icing.

🌟 prepare icing: place the coconut cream in the fridge for at least 2 hrs or overnight. In a Mixing bowl beat the name softened butter for 1-2 mins until light and fluffy, slowly add the chilled coconut cream to the butter and beat until smooth and fluffy. Gradually add powdered sugar, coconut extract and continue to Whisk until the mixture is light and fluffy. Once your muffins are cooled, spread or pipe the coconut cream icing on top.

🌟Decorate: with edible flowers (dry rose petals), sprinkles and dry roasted desiccated coconut, serve and enjoy the blooming delight.
