Quesillo is a traditional Mexican string cheese prepared for dishes like quesadillas and tortas. Traditional make with animal Rennet and heated, then pulled to create the perfect cheese. This recipe is a modern version anyone can make

Ingredients

  1. 1 gallonmilk
  2. 1/2 cupwhite vinegar
  3. 1 lemon
  4. Salt (start with a 1/2 a table spoon and add as needed)

Cooking Instructions

    Add milk and heat to 85 degrees (tip: if you don’t have a thermometer use your pinky and if your pinky is able to stay in there for more than 10 seconds it still needs time.)

    Create a vinagre and lemon mixture then add to the warm milk

  3. 3

    Let the milk curd and rest for 30 minutes with a lid on. Then with a cheese cloth and strainer separate the curds from the whey

    LET IT COOL, Salt and STRAIN over night.

  5. 5

    The next morning heat whey and add warm whey + Curds into a colindar. Stretch into itself (this part is very important and may take some practice)

  6. 6

    Reheat the curds and start stretching. Cool using cold water and Knot into shape!
