Easter Sweet Buns (“Pan quemao” o “masa de mona”)

Part of Spain has already started the Easter holidays, and the other part will begin them this coming Thursday. In Spain, most of us are Christians and we celebrate this religious holiday.
In my area, the Valencian Community, it’s typical to prepare “monas de Pascua” and “pan quemaos”. They take a bit of work because the dough has to rise, but the result is so worth it!!

I love the flavor they have, and of course, they include orange!! 🍊

Ingredients

  1. Preferment:
  2. 1/4 cupbread flour (50gr)
  3. 3 1/2 tablespoonwarm water (50gr)
  4. 1/2 teaspoondry yeast or 2gr fresh yeast
  5. 1 teaspoonsugar
  6. Dough:
  7. All the preferment
  8. 3 cupsbread flour (375gr)
  9. 2eggs
  10. 1/4 cupwarm milk (60gr)
  11. 1/4orange juice (60gr)
  12. 1/4 cupsugar (60gr)
  13. 1/4 cupcold unsalted butter, cubed (60gr)
  14. 1 tablespoonhoney
  15. 2 teaspoonfresh yeast or 1 tablespoon dry yeast
  16. 1 pinchsalt
  17. 1orange zest

Cooking Instructions

    Preferment:
    Dissolve the yeast and sugar in warm water (the sugar helps it activate faster 😉). Once foamy, add the flour and mix. Cover and let sit for 30 minutes.

    Start the dough:
    Dissolve the yeast in warm milk.

    Orange prep:
    Zest the orange, then juice it.

    Mix ingredients:
    Whether we’re doing it by hand or with the help of a stand mixer, we’re going to add the rest of the ingredients to a bowl: the milk with the dissolved yeast, the orange juice, the sugar, and the two eggs…

    Add:
    The tablespoon of honey, the pinch of salt, the bread flour…

    Then add:
    Orange zest and the preferment.

    Knead:
    Now mix and knead for about 10 minutes until gluten develops.

    Add butter:
    Cut cold butter into small pieces. Gradually incorporate it into the dough while kneading. If not using a stand mixer, it’s best to knead by hand here.

    First rise:
    Cover the bowl and let it rest for 1 hour in a draft-free place (the turned-off oven works great).

    Shape the buns:
    Once risen, shape the buns however you like—round, long, or even with a hard-boiled egg in the center. You can fill them with Nutella, sweet potato jam, “cabello de angel”… Let rest again, covered, for another hour.

    Bake prep:
    Preheat the oven to 390°F (200°C), upper and lower heat. Beat an egg with a splash of milk and brush over the buns. Sprinkle with sugar.

    Bake:
    Bake for 12–15 minutes, or until golden brown (time may vary depending on your oven). Cool on a wire rack.

    Enjoy:
    Crunchy outside, fluffy inside, and your house will smell amazing. I like to eat them for breakfast with apricot jam or dip them in milk! Enjoy!!!!
