Masala Dahi: Take Dahi in a bowl. Add red chilli powder, black salt, chopped coriander & salt. Mix. Chill thoroughly.

Tempering : Take oil in a pan, add mustard seeds. When the seeds crackle, add curry leaves, green chillies & asafoetida. Pour this tempering on the chilled curds. Mix.

If the curds is thick, add 1/4 cup of water & whisk again. Chill the curds in the fridge till use.

Batter : Wash & soak urad dal & yellow moong dals 3 - 4 times. Soak them separately for 3 - 4 hours.

Drain the water. Take both the dals in a mixer jar. Grind them first without any water. Then add 1 /4 cup water & grind to a coarse paste. (Do not use more water, or the wadas will disintegrate while frying.)

Beat the batter in 1 direction for 5 - 7 minutes till light & fluffy. The batter will change its color to light cream. Then add cooking soda, salt, green chilli - paste, asafoetida & cumin seeds. Mix.

Test the batter (it the consistency is right or not)in a bowl of water. Drop a small ball of batter in the water, if the ball comes up & floats on the water immediately, the batter is ready. If not beat the batter a little more.

Heat oil in a pan. Wet your fingers & drop small - small wadas in hot oil. Fry them till they turn golden in color, on a medium flame. They will swell up. Remove them in a plate & cool them completely.

How to proceed : Once the wadas have cooled completely, drop them in hot water. Soak them in hot water for 5 minutes. Remove the wadas & squeeze out the water by pressing them between 2 palms.

Assemble : Take 5 squeezed wadas in a plate. Dip them one by one in masala Dahi & place the in a deep plate. Generously pour chilled masala Dahi on it. Sprinkle red chilli powder & chat masala on it. Garnish with chopped coriander. Serve chilled Dahi vada immediately & enjoy hot summer evening with this cool cool chatpata treat.

Note : This is a South Indian Dahi Vada variety served in restaurants where they don't add sweet or green chutney, but the Dahi used in it is sweet & tempered with spices & is absolutely chilled.
