Made Macaroni Pasta Salad with elbow Macaronis, Chopped Veggies, Paneer and Mayonnaise. It is one of the popular Appetiser, can be served as a side dish or a main dish. Easy to prepare that can be refrigrated to use later and this makes it really a 'SUMMER SPECIAL'.
To keep it minimal, used very few veggies and this is what we actually love to have in our Salad dish. It came out just wonderful. Enjoyed by all.

Made Macaroni Pasta Salad with elbow Macaronis, Chopped Veggies, Paneer and Mayonnaise. It is one of the popular Appetiser, can be served as a side dish or a main dish. Easy to prepare that can be refrigrated to use later and this makes it really a 'SUMMER SPECIAL'.
To keep it minimal, used very few veggies and this is what we actually love to have in our Salad dish. It came out just wonderful. Enjoyed by all.

Take all ingredients together to make Macaroni Pasta Salad. To begin with, Cut 8 to10 Broccoli Florets lengthwise. You can also use Broccoli stems by peeling it first and then cutting them into 1 inch in length or even more small.

Further, wash Broccoli peices thoroughly with water. Now, we need to blanch it. In a saucepan, pour 2 cups of water by adding 1 tablespoon of salt. Bring it to boil. Add Broccoli Florets and it's stem peices in boiling water for 4 to 5 minutes on medium heat until they turn little tender.

Check the tenderness by inserting a knife or a fork. Turn off the heat. Drain water from the Broccoli Florets and put them into a bowl of ice cold water for sometime. This ice water bath will help to preserve the green color of the veggie.

Take out from the ice water and keep aside. Now, in a separate saucepan pour 4 to 5 cups of water by adding salt and oil.

Bring it to boil. When the water comes to boil, add elbow Macaroni. NOTE - Macaronis used in the recipe is 💯percent wheat Macaroni. (No Maida)

Boil for 7 to 8 minutes until they turn tender and soft by stiring in-between. Turn off the heat. Drain off macaroni pasta. You may pour a cup of cold water to stop the cooking process. Keep aside.

Now, prepare other veggies for salad.Peel and chop carrot cucumber and onion. I have used cucumber without peeling. Use as per preference. Now, in a large bowl, take 4 to 5 teaspoons of Mayonnaise. Add 1/2 teaspoon of black pepper powder. Note - You may use hung curd alternative to Mayonnaise. 2) Add more veggies of your choice like lettuce or olives.

Also, add 1/2 teaspoon salt and 1 tablespoon of lemon juice. Mix it well and salad dressing is ready.

Now add all the veggies along with paneer or cooked macaroni in the prepared dressing. Mix gently making sure the dressing is coated well. Note - Save 6 to 7 peices of paneer to add as a topping.

Cover and refrigrate for an hour to absorb all the flavours. Finally, top it with few paneer peices and garnish by sprinking just a pinch of more black pepper powder. It is ready to serve.

Serves best when chilled. Enjoy yummilicious Macaroni Pasta Salad.
