One day when cooking seemed tedious, I threw together this simple dish over rice and it got rave reviews, so I recreated it and posted the recipe.Since the flavor is strong, it is best eaten over rice. You can add the remaining sauce on top of the rice. Be careful not to serve too much! Recipe by shouko cookpad.japan -

Eggplant and Bacon Rice Bowl Eggplant and Bacon Rice Bowl
I love eggplant so I wanted to make an easy rice bowl using eggplant. Please adjust the amount of eggplant and sake depending on how many servings you need.Make sure that the bacon is cooked until crispy. The bacon in the photo is just before the crispy stage, but it was still good. Please adjust the doneness to your taste.I think 1 cm square is the best size to cut the bacon the eggplant, but as you can see I just did it roughly. For 4 servings. Bacon & Pumpkin Spaghetti Bacon & Pumpkin Spaghetti
I got the recipe from RealSimple blog and it was simple, although kinda sauce-less. Since the recipe is from RealSimple, the way to cook it is ALSO really simple. I tweaked it by seasoning the spaghetti with a little olive oil, salt, pepper, chicken powder and soy sauce. The amazing thing is that you don't really need to flavor anything else in the bacon tray because the bacon's got all of the flavor as it is! Marsha M -
