Gujarati Khaman Dhokla is a popular savory snack from the Indian state of Gujarat. It's light, spongy, and tangy, made primarily from gram flour (besan) and typically served as a breakfast item or tea-time snack.

Make the batter:
1. In bowl take a sugar, salt,and citric acid (limbuna ful).
Add water gradually and whisk to delute sugar and limbuna full.

Than mix oil, semolina and besan and mix gradually with no lumps.

Rest for 10–15 minutes.
Just before steaming, add ENO fruit salt and mix gently. The batter will foam and rise—don’t overmix.

Steam the dhokla:
Grease a steel plate or thali.
Pour in the batter immediately.
Steam for 15–20 minutes in a steamer or large pot with boiling water (cover the lid tightly).
Test with a toothpick—if it comes out clean, it's ready. Let it cool slightly and cut into squares

Prepare the vaghar (tempering):
Heat oil in a small pan. Add mustard seeds and let them pop. Add asafotida,green chilies, and curry leaves.
3. Add 1/4 cup water, sugar, Simmer briefly.
4. Pour this hot tempering evenly over the cut dhokla pieces

Now serve with green chtni, tumrind chutney or sauce or garlic chutney.
