Kaju Karela

Kaju Karela is a side dish prepared specially with Aam ras in every Gujarati house. It is also consumed as a sabzi. It is fine mixture of bitter gourd and cashews using basic daily spices. Even if you don't like bitter gourd, I'm sure you will like this recipe. Do try it ☺️

Select fresh, small and thin karelas which are seedless. Peel them, make thin slices with a slicer or knife. Add 1/2 tsp turmeric and 2 tsp salt mix it well and keep it aside for 10 mins.

You can see some juice releases. Squeeze it with help of two palms and bitterness will be removed.

Add oil in a pan,shallow fry karela chips and stir it continuously till it is crispy.

In a pan heat 2 tsp oil, add jeera, sesame seeds, asafoetida, curry leaves, green chilli. Also add cashews and raisins. Saute it.

Add all the spices. Give it a good mix. Add karela chips and mix well. Let the masala coat the chips.

Give it a taste test. Adjust your taste, garnish with chopped coriander and enjoy.
