Ingredients

20 minutes.
2 people.
  1. 1 cuppaneer, cubed
  2. 3/4 cupraw cashews
  3. 2 cupsplain yogurt
  4. 1/4 cupwater
  5. 1medium green bell pepper
  6. 1medium bunch cilantro
  7. 1 teaspoonsalt
  8. 1 teaspoonsugar or sugar substitute

Cooking Instructions

    Cut the paneer in cubes, roughly chop the cilantro and the green bell peppers, use raw cashew bits or just pound the cashews to make pieces.

    In a blender, blend the yogurt, bell peppers, cashews, and cilantro using a little water.

  3. 3

    Heat a pan (that has a lid) for 10 seconds on medium heat, lower the heat, and then pour the contents of your blender into the pan and stir gently.

    Add the salt and sugar (or sugar substitute), and then the paneer pieces. Stir gently again, and cover and cook on low for one minute.

    Now add a little water, stir the paneer curry gently, and cover again for another two minutes on low. Do check periodically and gently stir so nothing is catching on the bottom of the pan,and if it is, add a little bit more water. Check to see also that the paneer is softened.

    Once the paneer is soft and tender, check for salt and turn the heat off. Cover and let it rest for a few minutes. Then serve, garnished with green bell pepper pieces, raisins and cashews if desired, and serve with rice or flatbread! Enjoy! 😃
