Ingredients

For the Wrappers
  1. 300 gbread flour
  2. 30 gcornstarch
  3. 1/2 tspsalt
  4. 90 mlhot water (60–70°C)
  5. 90 mlcold water
  6. 1/4 cupextra cornstarch (for dusting)
  7. For the Filling:
  8. 3 cupscooked glutinous rice
  9. 1 lbground lamb
  10. 1small onion, finely chopped
  11. 1 bunchscallions, finely chopped
  12. 1 cupcarrots, finely chopped
  13. 1 cupmushrooms, finely chopped
  14. 1 cuppeas (frozen or fresh)
  15. 2 tbspsoy sauce
  16. 1 tbspdark soy sauce
  17. 1 tspsalt
  18. 1 tspblack pepper
  19. 1 tspfive-spice powder
  20. 3 tbspcooking oil

    Make the Dough for Wrappers:
    1. In a large bowl, mix the bread flour, salt and cornstarch. Gradually pour in the hot water while stirring with chopsticks, then add the cold water and mix until a rough dough forms.

    2. Knead until smooth (about 8–10 minutes), cover, and let it rest for 30 minutes.

    Prepare the Filling:
    1. Heat oil in a wok or large skillet over medium heat. Add ground lamb and cook until browned.

    2. Add onion, scallions, mushrooms, carrots, peas, and seasonings (salt, pepper, five-spice, soy sauces). Stir well.

    3. Mix in the cooked glutinous rice. Combine until evenly incorporated.And separate to 30 balls.

    Roll Out the Wrappers:
    1. Roll the dough ball to logs. Divide into 30 equal pieces.
    2. Roll each piece into a thin round disc (about 7–8 cm in diameter).
    3. Dust lightly with cornstarch to prevent sticking.

    Assemble the Siu Mai:
    1. Place a spoonful of filling in the center of each wrapper.
    2. Gently gather the edges upward to form a cup shape, leaving the top open.

    Arrange siu mai in a parchment-lined steamer basket. Steam over high heat for 6-8 minutes until the wrappers turn translucent and everything is cooked through.

    Serve warm with soy sauce, chili oil, or your favorite dipping sauce. Enjoy!
