Pizza Dough 🍕 or “Coca de Sal”!!

I’m sharing the recipe for “Cocas de Sal” from my hometown. You could say they’re kind of like “flatbreads” here, but just topped with olive oil and salt.
They also make a great base for any kind of pizza you like!
I used to make them with my grandma. They’re super easy to make and come out really crispy! We’d eat them plain or with cheese, ham, or some kind of cured meat.
Sometimes we’d make pizza, and one of our favorites was with zucchini, onion, and red bell pepper. Today I added some bacon and sausage too — my husband likes a bit of protein on his!
We used to bake them in a wood-fired oven she had out in the garden. You wouldn’t believe how amazing they smelled!

Activate the Yeast:
In a mixing bowl, add the warm water (to dissolve the yeast) and the yeast. If you’re using dry yeast, also add a teaspoon of sugar to activate it. Stir until fully dissolved. - 2
Add Oil and Flour:
Add the 1/2 cup of oil, a pinch of salt, and gradually add the flour while mixing until a dough forms that you can knead. - 3
Knead and Let Rise:
You can knead by hand or use a stand mixer. Knead for about 10 minutes. Form the dough into a ball, place it in the bowl, sprinkle a little flour on top, and cover with a cloth. Let it rise for 1 hour in a warm place (like inside the oven turned off with a blanket over the bowl to avoid drafts). - 4
Preheat the Oven:
After 1 hour, the dough should have doubled in size. Punch it down gently to release the air. Preheat the oven to 350°F (180°C), bottom heat if possible. - 5
To make “COCAS DE SAL”:
Take small portions of dough and stretch them by hand into oval or rectangular shapes. Place them on a baking sheet lined with parchment paper. Flatten them gently and press your fingertips into the surface. Drizzle with olive oil, sprinkle with coarse salt, and optionally add a touch of oregano. - 6
To Make PIZZA:
To turn it into a pizza, shape it round or square. You’ll likely have enough dough to make more than one pizza. Roll out the dough, keeping it thin because it will rise a bit later, and spread the tomato sauce on top. Use a spoon to finish spreading it evenly over the entire base, except for the edges. - 7
Now you can make the pizza with whatever toppings you like best! I made mine with zucchini, red bell pepper, and onion. I sautéed everything in a pan with a little olive oil, salt and oregano.

I grated a little bit of cheese (you can choose the one you like best, I used Havarti because it has flavor and melts really well and Mozzarella) and added it to the pizza.

Then I decided to add bacon plus sausage on one half for my husband.

Put it in the oven with heat from below, and when the edges of the base are golden, we can also check the bottom by lifting it with a spatula. If you like your pizza more golden on top, turn on the grill, but keep an eye on it!
