Bazlama - Turkish Flat Bread, WOWeeeeee

I love Naan and pita, well all breads really - this version is so good but with extra parsley and a few chilli flakes is is AMAZING and special. Enjoy :) - sadly really difficult to get fresh parsley but easy to use dried and nearly as good taste just not a pretty :P

Mix the yeast and sugar into the warm water and leave for 15 mins to activate.

Add the yogurt, and olive oil and combine.

In a large bowl add flour and salt, and dried parsley and chilli. stir to mix then add the yeast mixture and stir together to make a shaggy dough. then turn out onto work surface and Knead for about 4-5 mins until a nice even smooth dough. if a little sticky you can add a little more flour.

Return to cleaned bowl - cover and allow to rest for around 1 hour until double in size.

Knock back the ball and divide into 10 equal parts. then using floured hands roll into balls - you need to cover with a damp tea towel to stop drying out.

Heat a non-stick pan on medium. then roll out into a disk around 15cm and 0.5cm thick. add to pan cook for about 1.5 to 2 mins until golden brown and puffy and then flip and cook for another 1 min. set aside to cool and repeat with rest of balls.

Spinkle with more chopped Parsley and drizzle with more olive oil and serve. Great with Hummus or any dip or soaking up sauces, ENJOY :)

You can wrap in Foil or put into a zip lock bag and keep for 2-3 days - quickly reheat in a warm pan for 15 seconds. Mine never last 2nd day LOL :P
