Beef liver broth deepens the beef flavor in soups and sauces. A small amount of beef liver broth, the size of an ice cube, is enough to add a rich beefy flavor to a cup of soup.

By concentrating beef liver broth with these herbs and spices, and freezing it in cubes, you will have your own condiment ready anytime in the form of frozen cubes.

I tested the broth four ways: without herbs or spices, with onion, with onion and garlic and spices, and with onion, garlic and spices and soy sauce. Here is the winning recipe.

Ingredients

4 hours
2 people, 1 pint, 12 liver dumplings
  1. For the broth extract:
  2. 1 Tbsolive oil
  3. 1 poundbeef liver, veins removed
  4. 4slabs Canadian bacon, chopped
  5. 4 pintscold water
  6. 1/2 cupsoy sauce
  7. For the liver dumplings:
  8. 1 Tbsall purpose flour for dusting
  9. 1 poundboiled liver
  10. 1 cupcelery stalks
  11. 1mexican green onion
  12. 1 cupparsley leaves
  13. 1 cuppanko breadcrumbs
  14. 1diced shallot
  15. 1diced celery stalk
  16. 2fresh large farm eggs
  17. 2 Tbsparsley
  18. 1 Tspmace
  19. 2garlic cloves
  20. 2 Tspblack pepper
  21. Equipment: dutch oven, cast iron skillet, food processor
  22. Cost: liver $3, other $3, 6 dinners, $1 per dinner, plus broth

Cooking Instructions

    Dice beef liver and Canadian bacon and sautee in olive oil in cast iron dutch oven till browned

    Simmer in dutch oven with soy sauce and four pints of water, till liquid is reduced to one pint of broth.

    Cool and Grind leftover simmered liver and bacon dices with herbs and spices in food processor and mix with bread crumbs, eggs, onion, other ingredients.

    When sticky, roll into balls, simmer in hot, non boiling broth till solid.

    Drain, sieve and freeze broth in ice cube trays.

  6. 6

    Freeze liver dumplings for future use.
