Soak urad daal for 10 to 15 hours

Blend daal in small batches add little bit of water each time if needed

Blend smooth with pauses and make a fine smooth batter and whisk the batter for 5 minutes to make it more fluffy

Heat up the oil olive oil is best otherwise vegetable oil is good to fry

Once oil is completely heated up now low down the flame for 5 minutes otherwise bhallas got burned from outside and left uncooked inside

Use ice cream scoop or any spoon to put one bhalla a ball size in oil. If you know how to do with hand will be best. Only 4 to 5 bhallas in one batch please

Now fry the bhallas at medium flame all the time

Let them cool down to freeze for long time otherwise put them in room temperature water to drain excess oil and then good to add them in blended curd. Remember squeeze gently before adding into the curd because it will soak extra water due to fried and extra fluffy texture
