In a baking pan, heat some oil. Once hot, add the prepared kofta sausages and brown them on all sides. Once they have some color, remove them from the pan. In the same pan, add the grated onion and sauté until it softens. Add the green bell peppers, red bell pepper, and green chili pepper, and stir.

Add the diced tomatoes and minced garlic. Stir for a minute, then let it cook until the tomatoes break down. Once the tomatoes are cooked, add the tomato paste and stir. Add the salt, black pepper, paprika, and ground coriander, and mix well.

Return the kofta to the pan. You can leave them whole or cut them into pieces—I like to cut them so they soak up the sauce. Stir well and let cook for 2 minutes. Remove from the heat, sprinkle with fresh cilantro, and serve with tahini sauce and salad. You can also make sandwiches with it. Enjoy!
