Ingredients

  1. 40 gramsamaretto cookies
  2. 3ripe peaches
  3. 80 gramsdark chocolate (80%)
  4. Brown or turbinado sugar to taste
  5. Ice cream (vanilla or chocolate chip type)
  6. Fresh mint leaves, to garnish

Cooking Instructions

    Preheat oven at 180 degrees Celcius (355 degrees F). Slice in half the peaches and discard the pits.

    Carefully remove some of the inside of the peaches. Place peaches on a bake pan lined with parchment paper. Chop inside of peaches and set aside.

    Chop the chocolate and crumble the amaretti. Mix with chopped peaches.

    Fill the peaches with mixture. Sprinkle sugar on filled peaches.

  5. 5

    Bake for 15 minutes. Serve three halves on each place along with a scoop of vanilla ice cream and garnish with mint leaves. Pour any peach juices over the ice cream. Serve immediately.
