Egg vegetable paniyaram

Take a bowl add eggs, salt, pepper powder and chopped coriander leaves.

Beat well with a hand whisk or spoon. Add grated carrots, finely chopped beans and capsicum. Mix nicely to combine well.

Keep a paniyaram tawa on medium heat, after two minutes add oil and pour the eggs masala mix in each mould. Close with lid. Make the heat low. Then flip it to the other side. Let it cook for a few minutes. Egg vegetable paniyaram is ready.

Take out from the pan. Transfer to a serving plate. It's a full protein rice meal for kids. You can give it lunchbox also.
