Simple and easy yet so delish! Makes a large portion, can always half it, but great for feeding my growing boys and athlete husband!

Ingredients

1 hour
  1. 2 lbsground beef
  2. 2-2-1/2 lbs potatoes, diced into 1/4” cubes
  3. 2-16 ozjars chunky salsa whatever spice level you prefer
  4. 1/2 cchicken stock
  5. 2 tspsalt
  6. Pepper to taste
  7. 2-8 ozbags of shredded Jack/cheddar cheese
  8. Chopped fresh cilantro or parsley for garnish
  9. Avocado, chopped

Cooking Instructions

    Preheat oven to 400 degrees.

    Add ground beef to large cast iron pot (one that can go in oven) and cook until brown.

  3. 3

    Add potatoes, salsa, salt, pepper and chicken stock. Stir well to combine.

  4. 4

    Cover and simmer about 15-20 minutes or until liquid is reduced and potatoes are soft. Stir occasionally.

    Stir in 2 cups of shredded cheese, and sprinkle cheese on top, to taste.

    Put entire pot in oven (no lid) and bake for 10 minutes or until cheese is melted.

    Top with fresh parsley or cilantro and avocado.
