Beloved Egg Chicken (Kathi) Roll

Egg Chicken Roll is wildly popular in Kolkata, India and has quite the reputation throughout the Indian subcontinent! People come from all over the nation to sample Kolkata’s egg chicken roll.
It is also called Kathi Roll. Literally roll means a wrap and kathi means the wooden skewer so it is a wrap that is made from meat that has been grilled on a skewer. That’s the literal meaning.
It’s essentially a chicken wrap made with grilled chicken, veggies, and some sauces so not only is it delicious, it’s very nutritious too, despite being considered a street food.
I sometimes have this for lunch or dinner, especially if I have leftover chicken tikka (bite-size grilled chicken Indian style). I have a recipe for the chicken tikka on Cookpad as well.

Gather ingredients for ease of use. Dice the chicken tikka and keep aside.

Crack the eggs and beat them with a pinch of salt.

Heat a flat frying pan or tawa for a few minutes, then add 1 tablespoon of oil and when the oil is hot, spread half of the beaten egg in a circular motion, so it forms a thin omelette.

When the egg is just about set, place your flatbread (paratha or tortilla) over this omelette and press gently.

Now place some of those chicken tikka pieces on 1/3 of the flatbread.

Add your sliced green bell peppers.

Next add the sliced onions and pickled onions (an hour before you make this wrap, take 1/4 of the sliced onion, and add the vinegar, sugar and some of the salt and mix together and keep aside so the onion pickles.

Next add the sliced and julienned carrots.

If you’re using green chilies, you can add it next.

Next, I like to add ketchup and green hot sauce.

Now roll the wrap gently like a log and cover the bottom half with parchment paper. Tuck in the corner so the wrap is secure.

You can serve immediately and enjoy or, you can wrap the top half as well and reheat later and enjoy! Repeat the process to make another wrap.
