First, dry roast all the whole spices in a pan. Grind them into a powder, then transfer to a small bowl. Add hot oil, mix well, and set aside.

Heat oil in a pan. Fry the peanuts until lightly golden, then remove to a plate.

Fry the coconut slices and raisins separately and set aside.

Place the poha in a strainer and dry roast it over low heat in a heavy-bottomed pan until it becomes crisp (about 6-8 minutes). Be careful not to let it burn.

Now add the roasted poha to the spice mixture and mix well.

Add the peanuts, almonds, coconut, raisins, and salt. If you like a slightly sweet taste, add the sugar as well.

In another pan, heat 1 tablespoon oil. Add the mustard seeds and let them crackle, then add the curry leaves and let them sizzle. Mix this into the poha mixture.

Let the mixture cool completely, then store in an airtight container.
