In a pan, heat olive oil and add ground sausage and cook until no longer pink

Add in onions and garlic and sauté until everything is a nice golden brown

Pour in white wine and let it reduce slightly.

Stir in coconut milk and let simmer/boil for a few mins

While the sauce is simmering, cook the lentil pasta according to package instructions minus a minute or two, drain the pasta and add to the pan with the sauce to finish cooking

While the pasta is cooking in sauce, add in the spinach until wilted
- 7
Remove from heat, mix in grated cheese or butter to taste (optional), top with fresh Italian parsley and serve
