This time, we're using a double grill (you can substitute with an oven) to enjoy a variety of small chorizos, adding a little extra flavor with some bacon slices and a touch of homemade bitter orange marmalade.

This time, we're using a double grill (you can substitute with an oven) to enjoy a variety of small chorizos, adding a little extra flavor with some bacon slices and a touch of homemade bitter orange marmalade.

Slice the rolls in half.

Spread marmalade on the inside of each roll half.

Cut each half into two pieces.

Place half a slice of bacon on each piece of bread.

Slice the chorizos lengthwise, but not all the way through, and place one opened chorizo on top of each bacon slice.

Grill for about 7 minutes using a double grill or oven.

Check for doneness, then let sit for another 7-10 minutes with the grill turned off to use the residual heat.

Arrange on a platter and let everyone take the pieces they want.

Serve while still hot.
