Ingredients

  • 1 1/4 cupsall-purpose flour (150 grams)
  • 1/3 cupsugar (75 grams)
  • 4 tablespoonsmilk (60 ml)
  • 1 packetbaking powder (about 2 teaspoons or 8 grams)
  • 3 1/2 tablespoons butter (50 grams)
  • 1/2 cupshredded coconut (50 grams)
  • 1 pinchsalt

Steps

  1. 1

    Preheat the oven to 400°F (200°C). Grease the muffin tins.

  2. 2

    Melt the butter, then add the milk and the beaten egg. Mix well.

  3. 3

    In a mixing bowl, combine the flour, sugar, baking powder, and salt. Add the wet mixture to the dry ingredients.

  4. 4

    Mix until you have a smooth batter.

  5. 5

    Stir in the shredded coconut.

    Fill the muffin tins about 3/4 full and bake for about 18 minutes. Let cool for a few minutes before removing from the tins.
