Ingredients

40-55 minutes
2 cups chopped rhubarb
  • 1 cupsliced strawberries
  • 1/3 cupsugar
  • 2This chia seeds
  • 1/2 cupsugar
  • 1/2 cupmelted butter
  • 1/2 cupsugar
  • 1/4 tspnutmeg
  • 2 cupsoatmeal, blended into coarse flour
  • 1egg
  • 1 tspvanilla
  • 1 cupplant based milk
  • 1/2 cupplant based yogurt

Steps

40-55 minutes
  1. 1

    Preheat oven to 350

  2. 2

    Grease 9x13 baking dish

  3. 3

    In pan, evenly distribute all fruit, top with sugar and chia seeds

  4. 4

    In bowl blend butter, sugar, vanilla, egg. Mix until fluffy

  5. 5

    Add flour, nutmeg and powder

  6. 6

    Mix until blended

  7. 7

    Pour batter over fruit mix

  8. 8

    Bake in oven 40-45 minutes
