Chicken Soup with Tomatillo and Potatoes
Hearty soups, especially broths, have always been my family's favorites—even in warm weather. This one is as delicious as it is simple.
Steps
- 1
Cook the chicken in enough water with 2 cloves of garlic, the chicken bouillon cube, and salt to taste.
- 2
Separately, cook the tomatillos with the other 2 cloves of garlic, the onion, and the seeded jalapeño pepper. Once the tomatillos are cooked, blend these ingredients well with some of the chicken cooking broth.
- 3
When the chicken is almost done, add the potatoes and the green sauce (be sure to remove the 2 garlic cloves you added at the beginning).
- 4
Let it simmer until the potatoes are tender.
- 5
Note: You can add other vegetables if you like, and if you have cilantro, you can add some for extra flavor.
