4 to 6 Servings

1Egg Yolk
4 tablespoons (1/4 cup)Caster Sugar
2 tablespoonsLemon Juice
10 gButter

Whisk Egg Yolk, Caster Sugar and Lemon Juice in a small saucepan until smooth. Add Butter and whisk over low heat until the mixture thickens.

Set aside and cool, stirring occasionally. Chilli it in fridge until cold if you use it for a cold dessert.
