  • 1zucchini
  • Salt, to taste
  • Pepper, to taste
  • 3 tablespoonsgrated Parmesan cheese
  • as neededOlive oil,

20 minutes

    Slice the zucchini into rounds.

    Sauté the zucchini in a skillet with a little olive oil, salt, and pepper.

    Lightly beat the egg whites with the Parmesan cheese and a pinch of salt.

    Add the egg white mixture to the zucchini and cook for about 10 minutes, flipping the frittata once it is golden on one side.
