Chop the vegetables and add them to a skillet with plenty of oil over medium heat.

Beat the eggs with additional spices in a bowl. When the vegetables are soft, break them up with a wooden spatula and remove them from the skillet using a slotted spoon. Mix them well with the eggs. Pour the oil from the skillet into an oil container, then add the egg mixture to the hot skillet (without oil) over medium heat.

Cook for a couple of minutes until the bottom is set, then flip the tortilla onto a plate. Return it to the skillet and cook the other side for the same amount of time. Remove the tortilla from the heat and serve.
