Soak split mung dal for 2 hours, then drain.

Mix dal with turmeric, coriander-cumin powder, red chilli, garam masala, sugar, salt, lemon juice, and chopped coriander.

Slit the peeled sponge gourd pieces and stuff with the dal mixture.

Steam stuffed gourd and any extra dal for 20 minutes.

Heat oil, add cumin seeds, dry red chilli, and bay leaf. Add chilli-ginger paste and grated tomatoes, sauté.

Add steamed sponge gourd, extra dal, and water. Simmer for 5 minutes.

Garnish with coriander and serve with roti.
Tips
Adjust the spice levels according to your taste. You can also add more vegetables to the stuffing for added nutrition.
