Nei Choru (Ghee Rice)

Neychoru or Kerala Style Ghee rice 🍚 is a very rich Pulao recipe that is absolutely tasty. You can make it in a pressure cooker at home or in a pan. This rice recipe is a traditional recipe and uses dry fruits and raisins cooked together with ghee.
You can eat this simple plain with any vegetable curry or just serve it hot with curd. I love to eat my Lehsooni dal with Ghee Rice and it tastes yummy.

Heat ghee in a pan add cashew sauté it till light golden & add kismis sauté-it till it fluffy remove it & keep aside

In same ghee add bay leaf + star anise + cloves + black cardamom + cinnamon ; sauté it & add fennel seeds

Add sliced onions 🧅 & saute till golden color ; remove little for garnish

Add rice mix it then add warm water salt & green chili,give a stir & cove it

After some times when water almost evaporates add fried cashew & kismis cover it & cook for some time

Keep few cashews & kismis aside for garnish

Serve hot ghee rice in a plate garnish with some fried onions 🧅 + cashews & kismis

You can eat plan also & enjoy with Lehsooni dal
Tips
Nei Choru, you must use the kaima rice. But if you are facing difficulties in sourcing this particular type of rice or don’t have it handy at home then good option is the popular basmati rice.
