On May 1 the saucepan will be watering.Give the rice when the water boils.When the rice is boiled take it down.Heat ghee in a pan.Fry the onion until golden brown.Add cashew nuts, cardamom,cinnamon and green chilli fry lightly.Mix well with boiled rice,salt and carrots fry.

Serve hot after frying for a while.

This Kerala style fried rice is a nutritious dish in itself and can be accompanied by yoghurt or raita to enhance it's flavour.
