Crispy Fried Fish (Air-Fryer Recipe)

Crispy golden pompano is a delicious and affordable fish (I got mine for $7 at my local grocery store).
The skin fries up thin and crackly, almost chip-like when golden. The meat underneath stays moist and tender. Since pompano has relatively few small bones, it’s easy to eat whole.
Frying it in oil will give you the super crispy/crunchy skin, but if you want a healthier alternative, air-frying this is not bad! It still comes out crispy, but not as crispy.
I love making this for a low carb meal by eating it with lettuce wraps, seasoning it lightly, and dipping it with a Vietnamese sauce that consists of fish sauce, water, lime juice, sugar, garlic, and Thai chilis also known as nuoc cham.

All the ingredients needed in photo form.

Rinse, pat dry, score the surface on both sides, stuff it with 2 slices of lime, 2 smashed garlic cloves, 1 handful cilantro, and 1/2 inch sliced ginger, rub with oil, and season with salt and pepper on both sides. (TIPS) To get the super crispy skin while keeping the meat tender, you'll need to pat dry the fish completely. If you have time, you can also sprinkle salt to draw out more moisture then pat dry.

Preheat air-fryer and air-fry at 375F for 12 mins, flipping halfway.

Squeeze lime juice on top and enjoy with lettuce and nuoc cham dipping sauce.
