Here soaked poha and tempering are mixed first and then cooked by the steaming process.
Being Navratri, I have avoided onions in the topping.
Steps

Clean, wash and soak the poha for 20 minutes, keeping covered. (Sprinkle water as required)Mix gently to separate them.

Meanwhile, ready other ingredients.

Take soaked poha in a big plate and mix in salt, sugar, haldi and lemon juice.

Mix well. Do the tempering in oil with rai, jira, dhania, bay leaves, chillies,hing and curry leaves. Mix this tempering into the poha.

Transfer the tempered poha into a holed vessel.Boil water for steaming.

Steam rhe readied poha with lid covered for 5 minutes. (This way minimum oil is required for making the poha.) Before tempering, fry groundnuts and mix salt and Jiravan masala into the peanuts for garnish.

Mix the steaming poha in between to cook uniformly. After 5 minutes open and ready the serving plate/bowl. Garnish with masala groundnuts, coconut.

Garnish with coriander, pomegranate pearls, Ratlami Sev and Jiravan masala. (Can top with onions also)

Serve tasty Indori Poha with hot tea. Happy Cooking😊!!
Tips
Do not add excessive water to soak the poha. Wash with drinking water and sprinkle water as required to avoid sogginess. JIRAVAN MASALA can be prepared at home with dry roasted dhania, jira, cinnamon, cloves, pepper, fennel seeds, bay leaf. Cool and crush. And mix grated nutmeg, dry ginger powder, amchur, black salt, salt, powdered sugar, haldi, Kashmiri chilli powder and hing. This masala gives a spicy and tangy kick to the recipes.
