Ingredients

1 tray
  1. 1 cupChickpea flour
  2. 1 cup(plus 4 tbsp for frying gum, plus 1 tsp for milk powder) Ghee
  3. 1.5 cups (300 g)Powdered sugar
  4. 1 cupAlmonds
  5. 1 cupCashews
  6. 1 cup(plus extra for garnish) Pistachios
  7. 1 cupMilk powder
  8. 1 tspMilk
  9. 1 cupDesiccated coconut
  10. 1/4 cupEdible gum
  11. 1/2 tspCardamom powder
  12. 1/4 tspNutmeg powder
  13. for garnish (optional) Saffron

Steps

  1. 1

    Dry roast almonds, cashews, and pistachios. Cool, then pulse-grind to a sandy texture. Mix in cardamom and nutmeg powder.

    Microwave 1 tsp milk and 1 tsp ghee for 10 sec. Rub into milk powder until crumbly.

    Heat 4 tbsp ghee in a pan, fry edible gum until puffed. Crush with a masher.

    In a pan, melt 1 cup ghee. Add chickpea flour, roast on medium until golden and aromatic (5–6 min).

    Lower heat, add coconut, mix. Add milk powder, roast 1 min.

    Add edible gum, mix. Add nuts and sugar, mix 1 min on low heat.

    Remove from heat, spread in a greased tray. Garnish with pistachios and saffron.

    Let set 3–4 hours, then cut as desired.

Hi all, my name is Rekha. I am Indian by birth, born in Uganda, East Africa, I now live in Wilby, Northamptonshire/England.I retired at the age of 60 due to severe arthritis. I am married, a mother and grandmother.I learnt to cook from my parents at a very young age of seven. I started to cook simple dishes for the family and gradually learnt how to cook. My mum use to cook at our shop where we sold Indian sweets and savouries. I have learnt a lot from my mum. I started cooking fusion dishes and learning from others. My strong point is making sweet dishes and innovating new dishes. I can improvise and be creative in leftover dishes.I love being on Cookpad because I can share and learn new recipes. I have also made a lot of friends.
