Lasagna with Mushrooms and Sausage

Start by making the sausage ragù: Sauté the chopped celery, carrots, and onion for a few minutes. Add the crumbled sausage and cook until browned. Pour in some white wine and let it evaporate. Add the tomato purée and cook for about 30 minutes. Season with salt to taste.

Meanwhile, clean and slice the mushrooms. Sauté them in a pan with a drizzle of olive oil. Cook until tender, adding a little water if needed. Season with salt to taste.

Assemble the lasagna: Spread a layer of béchamel sauce on the bottom of the baking dish, then add a layer of lasagna noodles, sausage ragù, mushrooms, and grated cheese. Repeat the layers until all ingredients are used.

Bake at 350°F (180°C) for about 30 minutes. Serve hot.
