Steps

Wash fresh turmeric and ginger thoroughly. Peel and soak them in water for 10–15 minutes.

Cut turmeric and ginger into thin juliennes or preferred shapes. Transfer to a bowl.

Wash green and red chillies. Remove stems and seeds, then slice them thinly.

Add sliced chillies to the turmeric bowl.

Add salt and freshly squeezed lemon juice.

Mix everything well until evenly combined.

Cover and rest for a few hours before serving for better flavour.

Serving Suggestions :-

1) Serve as a side pickle with dal-rice, khichdi, curd rice or simple meals
2) Can be enjoyed with paratha or thepla
3) Adds a refreshing, tangy touch to winter meals
Tips
∆ Always use clean, dry hands and utensils
∆ Adjust chillies as per spice tolerance
∆ Store in an airtight glass container
∆ Refrigerated pickle stays fresh for up to 1 month
∆ At room temperature, stays good for 7–10 days
