  • 5 gchicken bouillon
  • enough kitchen twine for tying
  • 10 gcelery
  • 5 gsalt
  • 2 tablespoonspork lard (about 30 g)
  • 1 teaspoonannatto (about 5 g)
  • 3.5 ozpork shoulder or pork ribs, seasoned a day ahead (about 100 g)
  • 2/3 cupgreen beans (about 20 g)
  • 1/2carrot
  • 2 tablespoonsrice (about 30 g)
  • 1/4 teaspoonfreshly ground black pepper (about 1 g)
  • 2large banana leaves
  • 1 teaspoonall-purpose seasoning (about 5 g)
  • 1/4 teaspoonground cumin (about 1 g)
  • 1/4 teaspoondried oregano leaves (about 1 g)
  • 2 tablespoonsflat-leaf parsley (about 10 g)
  • 2 tablespoonsculantro (about 10 g)
  • 2garlic cloves
  • 1/2onion
  • 1bell pepper
  • 1boiled and peeled potato
  • 4 cupswhite corn masa (about 500 g)
  • Lizano sauce

    Thoroughly clean the banana leaves. Blend the bell pepper, onion, garlic, culantro, parsley, celery, and lard until smooth.

    Mix the masa with the mashed potato, blended mixture, all-purpose seasoning, chicken bouillon, cumin, salt, pepper, oregano, and lard.

    Set aside a portion of the masa and mix it with annatto and lard to make red masa.

    On the banana leaf, place white masa, then red masa, rice, pork, and vegetables.

    Prepare the pork: season with garlic, oregano, and salt.

    Wrap and tie the tamales with kitchen twine. Steam until fully cooked.
