Mtori wa Nazi

This is a Tanzanian green banana dish I discovered on Hussein Noor's Swahili recipe Facebook page.
Among the Chaga people, it is a common breakfast. It is also served to women during postpartum confinement because of its nutritious qualities and tender texture.
Traditionally, a special stick is used to mash the bananas.
Feel free to customise the seasoning- I used coconut milk instead of beef stock to enhance the flavour.
The dish is fairly thick and can be enjoyed as a main course. #sustainablenutrition

Have all your ingredients ready.

In the same pot used to boil the meat, heat oil and sauté onions until soft.

Add garlic and stir until fragrant.

Add carrots, bananas, coconut milk, and enough water to almost cover bananas, add curry powder, Knorr seasoning, and salt

Cover and cook until bananas are fork-tender.

Transfer mixture to a blender food processor for a smooth mixture (after allowing it to cool). Use the back of a wooden spoon to mash the cooked bananas while still hot for a textured result. I used the latter.

Return puree to the pot if you used a blender, add boiled meat, and heat through. If you used the traditional way to introduce meat while it is hot and stir to combine.

Garnish as desired and serve hot.
Tips
For extra flavor, you can add a squeeze of lime or lemon juice before serving.
If it is too thick add hot water to your desired density.
