Wash and drain the red spinach thoroughly.

Slice the onion thinly. Mince the garlic if using.

Heat oil in a pan over medium heat. Add onion (and garlic) and sauté until fragrant.

Add red spinach and stir-fry until wilted and tender.

Season with salt, mix well, and serve.

Tips

For extra flavor, consider adding a splash of soy sauce or a sprinkle of sesame seeds before serving.
