Poke a small hole in the flat side of each egg.

Bring a pot of water to a boil. Add all eggs at once.

Boil eggs for 7 minutes.

Remove eggs and place immediately in an ice bath for 5 minutes.

Peel the eggs carefully.

In a jar, mix soy sauce, mirin, and water to make the marinade.

Place peeled eggs in the marinade, ensuring they are fully submerged.

Marinate in the refrigerator for 2 days before serving.

I’m not sure how long they last in the refrigerator, but I only keep mine for a couple days.
Tips
Poking a hole in the flat side of the egg helps with easier peeling.
