Ingredients

30 minutes
  1. 1 lbshrimp, peeled and deveined
  2. 1 tsppaprika
  3. 1/2 tspItalian seasoning
  4. 5 clovesgarlic, minced
  5. 1/3.c sun dried tomatoes, diced
  6. 1 cuncooked whole grain orzo
  7. 2 cchicken bone broth
  8. 14 ozcan artichoke hearts, drained and diced
  9. 5 ozfresh spinach
  10. 1 cheavy whipping cream

30 minutes
  1. 1

    Heat 2 tbsp olive oil over med-high heat in a deep skillet. Season the shrimp with paprika and Italian seasoning, with a pinch of s&p. Add garlic and shrimp to skillet with shrimp in a single layer. Cook until shrimp are opaque, about 2 minutes on each side. Remove shrimp to plate.

    Add sun dried tomatoes, orzo, and 1 tbsp olive oil to skillet. Cook on medium heat until orzo is toasted, 2-3 minutes.

    Add bone broth. Bring to boil then reduce heat to medium-low and simmer for 6-8 minutes until orzo is cooked, stirring occasionally.

    Add spinach, artichokes, and cream. Stir together until spinach wilts. Add shrimp back to pan and heat through, about 2 minutes. Sprinkle with additional paprika if desired once plated. Enjoy!
