  1. 150 gramsred lentils
  2. 50 gramsall-purpose flour
  3. 1small onion, finely chopped
  4. 2garlic cloves, minced
  5. 30 gramsfresh parsley, chopped
  6. 5 gramsscotch bonnet pepper, deseeded and minced (optional)
  7. 50 gramssmooth peanut butter
  8. 60 mlvegetable broth
  9. 1lime, juiced
  10. 250 mlvegetable oil for frying

    Rinse lentils thoroughly and boil until tender (about 15-20 minutes). Drain well and mash coarsely.

    In a bowl, combine mashed lentils, flour, chopped onion, minced garlic, parsley, and scotch bonnet (if using). Season with salt and pepper.

    Form the mixture into small, flat fritters, about 3 cm in diameter.

    Heat vegetable oil in a pan over medium-high heat. Fry fritters for 2-3 minutes per side until golden brown and crispy.

  5. 5

    While fritters cook, whisk together peanut butter, vegetable broth, and lime juice in a small bowl until smooth for the drizzle.

  6. 6

    Remove fritters from oil and drain on paper towels.

  7. 7

    Arrange fritters on a serving plate and generously drizzle with the peanut sauce.

  8. 8

    Serve immediately as a delightful starter.

Tips

Ensure lentils are well-drained before mashing to prevent soggy fritters.

For extra flavor, add a pinch of cumin or coriander to the fritter mixture.

Adjust the amount of scotch bonnet pepper to your desired spice level.
