Heat 2 tsp oil in a pan, add grated beetroot, and roast until the raw smell disappears.

In a bowl, whisk yogurt with coriander powder, black pepper, and salt.

Add the whisked yogurt to the cooled beetroot and mix well.

For tadka, heat 1 tsp oil, add cumin seeds, mustard seeds, and curry leaves,sliced green chilly until they splutter.

Pour the tadka over the raita and mix gently.

Garnish with chopped fresh coriander before serving.
Tips
Make sure to roast the beetroot well to enhance its flavor and remove the raw smell.
