A light Bengali-style Rui fish curry flavored with fresh coriander leaves and green chillies, mildly spiced and best enjoyed with steamed rice.
Steps

Marinate the fish:
Rub the Rui (Rohu) fish pieces with salt and turmeric. Keep aside for 10–15 minutes. - 2
Fry the fish:
Heat oil in a pan and lightly fry the fish pieces until just golden. Remove and keep aside. - 3
Prepare the base:
In the same oil, add onions and fry until lightly brown. Add chopped carrot it is optional - 4
Add ginger and garlic paste and sauté for 1–2 minutes. Add spices:
Add turmeric, (optional) red chilli powder and cumin powder.
Cook well, adding a little water so the spices do not burn. - 5
Make the gravy:
Add water as required and salt to taste.
Once the gravy starts boiling, gently add the fried fish pieces. Final touch:
Cook for 5–7 minutes. Add green chillies and chopped coriander leaves.
Cover and cook for another 1–2 minutes. - 6
Serve hot with steamed rice. 🍚🐟
