Rinse the lentils and soak them in water for at least 8 hours. This will help reduce the cooking time.

In a large pot, sauté the onions in sunflower oil (or coconut oil), then add the garlic. Add the mushrooms and cook until tender.

Add the lentils and stir. Pour in the 2 1/8 cups of vegetable broth, stir, and simmer uncovered for 10–15 minutes until the lentils are just tender.

When the lentils are cooked, add the coconut milk and stir.

Add chopped parsley or cilantro before serving with Basmati rice.
