Preheat your wood-fired oven to about 500°F, then allow it to cool down to 325–375°F for roasting.

Pat the turkey dry and rub olive oil or melted butter all over the surface. Season generously with salt and black pepper.

Stuff the cavity with onion, lemon, garlic, rosemary, and thyme.

Place the turkey in a roasting pan and pour stock into the bottom of the pan to keep it moist.

Put the turkey in the oven breast side up and cover loosely with foil.

Roast the turkey and rotate the pan every 30 minutes for even cooking

After about 1–1.5 hours, remove the foil and continue roasting until the internal temperature reaches 165–170°F.

Remove the turkey from the oven and let it rest for 20 minutes before carving and serving.
