Ingredients

  1. 1 cupGreen peas
  2. 1–2 tsp (optional) Lemon juice
  3. to taste Black pepper
  4. 1 pinchSalt
  5. 1 splashWater
  6. 1 tbspOil
  7. 1Small onion
  8. 1.0 headCabbage
  9. to taste Salt
  10. 4 cupsWater
  11. 1 tbspGinger-garlic paste
  12. 1 tbspPilau masala
  13. 2Large onions
  14. 1 kgPork ribs
  15. 2 cupsBasmati rice
  16. 2 tbspFresh coriander or parsley (for garnish)
  17. as neededWater
  18. to taste Pepper
  19. to taste Salt
  20. 1 tspGinger (optional)
  21. 2Garlic cloves
  22. 1Onion
  23. 2 tbspSoy sauce
  24. 0.5 cupHoney
  25. 1 cupTomato sauce

Steps

  1. 1

    Sear ribs in a pan until browned. Add chopped onion and garlic.

  2. 2

    Pour in tomato sauce and enough water to half-cover ribs. Simmer covered on low for 1 hour.

  3. 3

    Stir in honey and soy sauce. Simmer uncovered 15–20 min, basting often, until sauce thickens.

  4. 4

    Transfer ribs to a baking tray. Bake in a preheated oven at 200°C (390°F) for 10–15 min, basting with glaze, until caramelized.

  5. 5

    Garnish with chopped fresh coriander or parsley before serving.

  6. 6

    Fry sliced onions in oil until deep brown.

  7. 7

    Add ginger-garlic paste and pilau masala, stir well.

  8. 8

    Add rice and peas, then water and salt. Cover and cook on low until water is absorbed and rice is fluffy.

  9. 9

    Sauté sliced onion in oil. Add shredded cabbage, a splash of water, salt, and black pepper.

  10. 10

    Cover and steam for 5 min until cabbage is bright and slightly crunchy.

  11. 11

    Drizzle with lemon juice just before serving for a fresh finish.

Tips

For extra flavor, consider marinating the ribs in the honey and soy sauce mixture for a few hours before cooking.
