Hi! Today I wanted to make squash, but I didn’t want to do something simple or traditional like mashed or just baked, so I made this stuffed version and it turned out great 👌 Hope you like it, enjoy!

Hi! Today I wanted to make squash, but I didn’t want to do something simple or traditional like mashed or just baked, so I made this stuffed version and it turned out great 👌 Hope you like it, enjoy!

Cut the squash in half lengthwise. Place it in the oven and bake until soft so you can scoop out the flesh for the filling (this will take about 1 hour, depending on your oven).

Once the squash is ready, scoop out the flesh and put it in a bowl or two (I used two bowls because I didn’t add cheese to one).

Add the ham and cheese, one tomato, two hard-boiled eggs, and the tablespoon of garlic and parsley to the bowl (feel free to add any other ingredient you like).

Fill the cooked squash shells with the mixture so they are well stuffed.

Top one half with a few slices of fresh cheese and return to the oven to heat through.
