  • 1 CupShreadded Mexican 3 Cheese [room temp]
  • 1/4 CupFresh Jalapeño Peppers [minced]
  • 2LG Habenero Peppers [fine minced]
  • 1 (4 oz)Can Hatch Chopped Green Chilies [fully drained]
  • 2 CansOf Your Favorite Chili [w/ beef & beans]
  • 1 CupPrecooked Fine Shredded Rotisserie Chicken
  • 1+ (10 oz) Can Rotell Tomatoes W/ Chilies [fully drained]
  • 1 CupFresh Cilantro Leaves [rough chopped]
  • 1/4 CupFresh Parsley Leaves [rough chopped]
  • 1/4 CupOf Your Favorite Red Salsa [we used homemade]
  • 1/2 CupRed Onions [fine diced]
  • 1/2 CupWhite Onions [fine diced]
  • 1 CupRed, Yellow & Green Bell Peppers [equal parts-fine diced]
  • 1/4 CupChives [chopped]
  • 1 tbspFresh Garlic [fine minced]
  • 1/2 tbspGround Cumin
  • 1 tspCrushed Dried Mexican Oregano
  • ● For The Sides & Garnishments
  • as neededFresh Cilantro Leaves
  • as neededFresh Warm Pretzels
  • as neededFresh Tortilla Chips
  • as neededFresh Tortillas

Steps

  1. 1

    Chop all veggies and cheeses. Place in a large microwaveable bowl.

    Heat in microwave in 2 minute increments for 8 minutes and stir well each time.

    Serve piping hot with tortilla chips and garnish with fresh Cilantro.

My culinary specialties as an easy going Chef include Asian, Mexican, Cajun, BBQing, Grilling, Irish Pub food, Low Country foods, anything seafood related, extra spicy foods, fresh meat, extra fresh vegetables, US comfort, kid friendly and super fast, quick and easy foods. But, I'll literally put anything in my mouth at least once. Pfft! My daddy didn't nickname me, "Goat," at two years of age for nothin'! Yup! I'll literally put anything in my mouth at least once!P.S.
