Ingredients: Dressing :; 2 tbsp. mayonnaise; 1 tbsp. sour cream; 1 1/2 tsp. honey (or granulated sugar); 1/2 tsp. apple cider vinegar; 1/4 tsp. poppy seeds; pinch salt and pepper; 1-2 tsp. milk (optional to thin out dressing); Salad :; 1/2 cup diced apples; 1/2 cup red grapes, sliced in half; 1/2 cup coarsely chopped walnuts; 1/4 cup dried cranberries; 1/4 cup thinly sliced celery; 1 cooked and diced chicken breast; 1 1/2 cups chopped romaine lettuce (or green of choice)

This is a spin on a classic Waldorf salad, but with the added protein of chicken and served over romaine to make it into a hearty lunch. I also put together a creamy poppy seed dressing for this, rather than using mayo only, which is what a traditional Waldorf salad is tossed with. I generally eat salads at work, so I usually pack my salads up in a quart sized mason jar to easily take it with me. Recipe loosely adapted from : The Domestic Geek

Ingredients

1 salad

Dressing :
2 tbsp.mayonnaise
1 tbsp.sour cream
1 1/2 tsp.honey (or granulated sugar)
1/2 tsp.apple cider vinegar
1/4 tsp.poppy seeds
pinchsalt and pepper
1-2 tsp.milk (optional to thin out dressing)
Salad :
1/2 cupdiced apples
1/2 cupred grapes, sliced in half
1/2 cupcoarsely chopped walnuts
1/4 cupdried cranberries
1/4 cupthinly sliced celery
1cooked and diced chicken breast
1 1/2 cupschopped romaine lettuce (or green of choice)

Steps

Whisk together all of the dressing ingredients in a small bowl and set aside.

The dressing is quite thick (especially if you use sugar instead of honey), so if you'd like it thinner, you can add milk a tsp. or so at a time until you reach the consistency you like.

For the salad, just toss everything together, drizzle the desired amount of dressing over the top and enjoy!

If you'd like to pack this in a mason jar like I do, use a wide mouth quart sized one. Dressing in the bottom, then layer in the celery, apples, grapes, chicken, romaine, dried cranberries and walnuts...in that order.
